To say orecchiette is to say Puglia. The format became widespread in Puglia between the 12th and 13th centuries. In Bari, orecchiette are called \u201cstrasc'nat\u201d in dialect (\u201cdrawn out\u201d), from the typical movement of \u201cdrawing\u201d the pasta with the finger to obtain the classic round, concave shape.
