Why do we choose italian wheat?

To support Italian farmers.
Because of the characteristics of the raw material.
Because of the variety of wheat provided by the Mediterranean “Macchia” coastal shrub area.

In our short supply chain, Pastificio Liguori is the leader and sets the quality standards for the raw material. In fact, our specifications are up to 50 per cent stricter than required by Italian law.

The raw material is then rigorously checked at each unloading to verify compliance with the agreed quality and food safety standards.
First of all, our technicians check the standard percentage of gluten, with an index of 90%, and the protein content:

Liguori standard protein: 14,5%
Proteins according to IGP specifications: at least 13%
Proteins according to Italian law: at least 10%

Why choose a high protein level?
Because the high protein content, together with the quality of the gluten, is the best indicator for an aromatic, good, tenacious and strictly al dente pasta!

In depth

Close
